This soup is one of my favorite soups, and I hope it’ll become a favorite of yours too! For this recipe you need a variety of different vegetables. It’s so versatile that you can change up the different vegetables and the soup will still taste great. It’s a perfect soup to make when you need to use up the vegetables in your fridge.

 

Here’s what you need for this Vegetable Loaded Soup

  • Onion
  • Sweet potatoes
  • Carrots
  • Zucchini’s
  • Head of broccoli
  • Celery stalks
  • Olive or avocado oil
  • Veggie broth (or half bone broth and half veggie broth)
  • Minced garlic
  • Oregano
  • Real salt and pepper for taste

Vegetable Loaded Soup

Cozy up with this hearty vegetable soup that’s loaded with tons of delicious vegetables.

Ingredients
  

  • 1 onion diced
  • 2 sweet potatoes
  • 2 large carrots
  • 2 zucchini's
  • 3 celery stalks
  • 2 tbsp minced garlic
  • 1 tbsp avocado oil (or olive oil)
  • 2 quart vegetable broth (or half bone broth, and half veggie broth)
  • 1 tsp fresh oregano (dried works as well)
  • Salt and pepper for taste

Instructions
 

  • Chop all the vegetables.
  • In a large pot, add avocado oil and diced onion. Saute on medium heat till onion is cooked.
  • Add all the ingredients to the pot. Cook on medium/high till soup starts to boil. Turn the stove down to low and place lid on the pot. Cook for another 25 minutes or longer until the potatoes and carrots are soft.
