A great way to start eating healthier is to focus on eating more vegetables each day. Vegetables are packed with nutrients, fiber, vitamins, and so many more health benefits to keep us healthy. Zucchini is one of my favorite vegetables and I absolutely love eating zucchini noodles because it’s a great way to get some yummy wholesome vegetables.

This meal was inspired by one of my favorite dishes at The Old Spaghetti Factory “Spaghetti with Mizithra Cheese and Browned Butter” and I wanted to recreate my favorite pasta dish from The Old Spaghetti Factory and use zucchini noodles instead of spaghetti noodles. This dish only has three ingredients! Zucchini, butter, and mizithra cheese.

How to Make Zucchini Noodles?

Making zucchini noodles is super easy! There are a few options that you can do:

  • Spiralizer: Easiest and best way to make zucchini noodles is using a spiralizer.
  • Mandoline: This is a great option as well with the julienne blade. Or if you want to have lasagna-like zucchini noodles then use the slicer attachment.

If you don’t have these tools you can buy premade zucchini noodles at the grocery store. Look in the produce section by other pre-chopped produce or get frozen premade zucchini noodles in the frozen vegetable aisle.

How to Cook Zucchini Noodles

Here is the best way to cook zucchini noodles perfectly. This method is so easy and fast.

  • Add 1 tsp of oil or butter to a large pan
  • Add spiralized zucchini noodles
  • Cook for 3 minutes – or until zucchini noodles are nice and tender. (Tip: make sure not to overcook the zucchini noodles since they will get soggy)
  • Strain the zucchini – you’ll notice that the zucchini noodles release water when they are being cooked. Straining them helps the noodles from being watery.

  • Mizithra cheese

What is Mizithra Cheese?

Mizithra is a Greek cheese made from sheep or goats. It’s has a similar texture to shredded parmesan cheese.

You can buy mizithra cheese from Harmons, Sprouts, and Trader Joe’s.

Zucchini Noodles with Mizithra Cheese and Browned Butter

Ingredients
  

  • 2-3 zucchinis (medium size)
  • 2 tbsp butter
  • 1/2 cup mizithra cheese
  • 1 tsp olive oil (or avocado oil)

Instructions
 

  • Slice the zucchini steams end off and place on your spiralizer. Turn the spiralizers to create perfect zucchini noodles.
  • In a large pan, add oil and heat on medium-high heat.
  • Add zucchini noodles and continue stirring for about three minutes or until zucchini noodles are nice and tender.
  • Next strain the zucchini noodles to get the water out. Put the zucchini noodles to the side and add 2 tbsp of butter to pan. Warm the butter until the butter has a brownish tint.
  • Add the cooked zucchini noodles back to the pan and mix with the butter. Then stir in the shredded mizithra cheese.
